Vitamins Organic fat- or water-soluble substances that are required in small amounts, necessary for numerous special functions and affected by environmental conditions such as light, heat and air. Food storage, processing and cooking can all act to reduce the level of vitamins in food. The fat-soluble vitamins are A, D, E and K which can be stored in the body and so dietary sources are not needed every day.
